  • Nice presentation! I've been using a bottom sirloin cut locally called "flap meat steak" that is similar to culotte steak. Very well marbled cut that does not get tougher if you accidentally overcook it. I marinate it before grilling. The left overs make wonderful steak sandwiches. I'll let you know when I make a video of it.

  • Only thing I would do different would be to sear it on each side on the stove top before I finished it in the oven. It looks great though. I love steak and bleu cheese both so I imagine that would be pretty tasty.
