I made these cupcakes at Halloween and I am making them again now. They are awesome and really easy. The cream cheese frosting is like a cloud. just a tip. leaving any kind of baking food in the pan or sheet after its finished cooking to "cool" doesn't cool the baked goods. it just keeps cooking the food because the pan is still hot.

With the "organic vanilla" comment, id just like to say you dony have to use organic, because organic just means naturally grown without chemicals or pesticides. So if you were unsure about vanilla, just make sure it says "pure" on the bottle. Pure and organic mean the same thing when it comes to vanilla

what you need: -pumpkin pie filling in a can -yellow cake mix -same things you used for the cream cheese icing how to: -pour out the yellow cake mix into a medium mixing bowl -pour out all the pumpkin pie filling on top -mix with a wisk (i reccommend a handheld electric mixer though) -pour into a cupcake tray and bake 8-12 min (start checking them around 8 min) -let them cool while you make the icing the same way you did -layer on the icing -sprinkle with cinnamon -ENJOY! (:

I also saw the same recipe video by Stephanie Jaworski of Joy of baking. I really like her because all the Joy of Baking recipes are definitely the best I have ever tried. I'm don't mean to be disrespectful but Blair have definitely done a better job when it comes to presenting the baking process in a lively and engaging style. I watched this video several times because I enjoy it so much.
