Having done a websearch on this system it is said to use two near infra-red sources in the bumper and a camera to record the image, but most of that image will be constructed from visible light, not infra-red. Many single chip cameras show some sensitivity to very near infra-red (try firing a TV remote at one) but nothing at longer wavelengths.
Go to MBUSA(dot)com and go to the S-Class page and to Options and Packages I believe. Then look up Premium Package 2 or 3.
I'm not familiar with IR technology, so correct me if I'm wrong. The camera is IR, but that doesn't necessarily mean the image projected on the screen HAS to be in the color spectrum IR is detected in. Maybe the computer in the car and screen change the colors to give you back the blue and white.
I know what an infra-red image looks like as I worked for a company that makes infra-red detectors for six years. That is not an infra-red image. Mercedes (NB, not you personally pmb600) are misleading potential buyers if they are trying to pass that off as infra-red technology.

I've been on the (appalling) Mercedes website but can't find any info on this supposed infra-red system. Any chance of a pointer ?

That's an image intensifier - not an infra-red image.
