Shot was way too fast due to many reasons. Firstly bad tamping technique. Tamp, knock, tamp. Secondly grounds were too coarse. Thirdly bad leveling technique. And finally very dirty machines.

@Paropa coffee usually only tastes sour if its prepared too hot.

@foxsux6000 yeah water temp first IF your extraction is correct.

It's the other way around: Too hot creates a bitter taste because it's over extracting and too cool under extracts resulting in sour espresso.

The amount of time it took for the hot water to run through the puck seemed a bit long? 3-4 seconds is a nice pour, but your preferance and training may of been slightly different so who knows.. all these different ways huh
