@caholaway From what I've read, Dexters are an excellent meat and milk cow and are both cold and heat hardy. Most milk is approximately 5% fat and a mechanical separator needs to be used for cream and such. They have a typical 18-24 month weight of around 750 lbs and you get roughly 50-60% meat/live weight ratio. A steer gets up to around the 1000 lb mark but should sell good at 800-900 lbs.
