thise temps on your CPU load seem outragously high. I have a core i7 920 overlclocked at 3.6 GHz as well and don't get over 63C on full load using Prime 95. Might want to lower the CPU voltage if you can to get lower temps. Even if your ambient temps are high in the room, that still seems really high. just saying

I've configured a pretty sweet Hornet NE, but I'm having a hard time choosing between two Radeon HD 4870 1 GB cards or two GTX 285 cards. I plan on doing a lot of 3D modeling and animation and some intense gaming, so which would be better for me? Thanks!
For 3D Modeling and animation, NVIDIA cards have been historically better due to slightly better driver support for professional applications. Also, the GTX 285 is kind of a step above the 4870 1GB card in price and performance, so that would be a better (though more expensive) choice. Alternatively, look at the new ATI Radeon HD4890 cards. Those are widely considered to be the best thing out there right now.

You bring up a good point. The graphics cards in a 3-way SLI setup will always run very hot for this reason. The case we use does have a lot of front to back airflow to feed in cool air, but we agree that the design of the NVIDIA cooler is bad for 3-way SLI.
That is why we have developed the "A.T.O.M.I.C" GPU cooling system that is still kind of in production to help with this problem. Can't really tell you anything else about it though ;)
Cool its not just 3 way SLI because i got the nforce 750i 2 way sli mobo with 2x 9600GT's in and they are rite next to eachother and the bottom one is abit cooler then the top one.
What temps do these graphics cards get in this machine on this video or if you dont remember what temps do most of your graphics cards go up to when rite next to eachother like that??
90C is fine in 28C ambient under full load (100% on all 8 threads not just 4 cores). We do not recommend extended use at these kinds of temperatures, and the fact of the matter is you won't be running an overclocked system at 100% on all 8 threads during even extremely abnormal use.
Also, Vcore is set to 1.375V for this processor (an engineering sample that is not retail silicon). 3.6GHz is achievable at like 1.3V on a lot of the retail processors. Temperatures will be dramatically lower in this scenario.

how is the clairence for the front panel connectors? like usb and power reset leds and stuff like that when running multiple cards like you do?

I don't think the cooler is very good for overclocking, yea the i7 runs hot but shouldn't be run that hot. Besides that its nice.
