  • @SporadicallySane Nope sorry wrong, I have lived here 10 years and you can get a lot of great tasting sausages here in Japan, but everything is only about 5 cm long, there is nothing like long aussie sausages.

    After 10 years here in Japan I would NEVER set foot in australia again. I know what is in my foot here in Japan because the rules are very strict unlike in australia.

    Yes you can use pork with spices it's not just one type of meat you can use

  • I like all kind of sausage is beer brats but the way I like mine is before I cook them I boil them in some dark beer for a while and then put them on the smoker to finish them off. That beer really gives them a good flavor. Then serve them the way you like them. Yummy.

  • I made sausage links once. IMHO it may be a much better process if you have two people - one pushing meat through the grinder, and one handling the casing. Doing all the meat I had from a wild hog, by myself, was tough & messy.

  • @gimmeabreakdude He's makin a Bratwurst sausage, very different in regards to the everyday sausage. that there sausage would be a pleasure to eat

    Still some good recepies. Pork shoulder, Granny smith Apples & and cinnamon /nutmeg....

    Also try chicken breast w/ sundried tomato, basil & a bit of whatever else may work in the batch for you.....

    I miss living near a stones throw from a butcher.

    Tweek the idea though, I know you can elivate the awesome!

  • looks like a good bratwurst recipe - i am a german and my mother makes the bratwürste very similar

  • mate, just a tip from a butcher, if you wet your hands when you handle the mince it wont stick as much also you can wash the inside out and help untie the casing by putting a little pocket of water into the casing as you slide it on, just put two fingers into the end and dip it in a bowl of water.

    they look great, hope the eat well aswell!
