  • Made this with chicken breast, and sans the bacon. Sear the chicken first to start the base of the sauce (does a good job replacing the bacon), and then let them finish cooking in the stock while it is reducing, with the lid on. I made it low fat by stirring in non-fat sour cream at the end, which gave it a tangy flavor. Sooooooo good!

  • dude…we butcher our own rabbits. we also raise them in humane and stable conditions and let them roam freely in a secured yard.

    i would eat that any day over cows ripped away from their mothers and stuffed in a crate for their entire lives.

    Yes! You can. Try to use a older, heavier chicken. The flavor and texture of the meat will be closer.

  • I've cooked this recipe before and it is absolutely AMAZING!

    Rabbit is one of the healthiest meats available -- more protein and less cholesterol than beef, chicken or turkey!

    I soak the rabbit in a saltwater brine for about 6-10 hours before cooking. Haven't had a chance to use the kidneys since the store I buy rabbit from doesn't sell them with the guts.

  • @janaiba23 . count me in but i will not eat spiders or pig ( muslim ) no matter how they are cooked... i hate fish but will still try it each time its cooked differently i might find one i actually like.. while in Thailand i got the chance to eat fried seasoned grasshoppers and OMG they are so nice i eat snake, rabbit, kangaroo, wallaby,goat, sheep, camal, beef ( bison, buffalo , cow ) . i havent tried horse as yet but i plan on it :)

  • @janaiba23 It's common to eat horse in switzerland, pigeons in france. Horse is really delicious, but I don't eat what I couldn't kill... Pigeons on the street are rather sick and it's not good to eat them... They're not called flying rats for nothing. And when we would only eat meat 1-2 times a week, we'd have the proteins, but would eat less, so more corn would be used to make food and not to feed the animals

I dont like my rabbit washed with chemical pneumonia to get rid of food borne illnesses. If it is cleaned and stored properly thats not an issue.

  • tried this recipe last weekend. very delicious, i highly recommend it. only thing i did different was slow cook the rabbit for about 8 hours and then shredded the meat over angel hair pasta instead of tagliatelli. very tasty indeed!

  • @vicz200 If you chop it to much you'll bruise the herbs and lose lots of flavour.

  • Too much chopping and the parsley will bruise, which doesn't look very good. Taste is probably the same.

  • Theyre very tasty, actually. I'm not sure whats so nasty about them. What is nasty is the process by which they produce the lower grade ground beef for food service institutions, and the conditions chickens on most chicken farms are raised in. Thats disgusting.

  • @killerdank True, I'm trying to divorce myself from factory farming completely. My metabolism really prefers meat though, so no vegetarianism for now. I fancy going out and humanely killing my own rabbit now and cooking it myself, as it would be the easiest way to get full respect for the meat that I eat.

  • Probably didn't have the best liver/kidney experiences. Properly cooked liver and kidney is buttery and tender and smooth to the palate.

  • No comments? PFT, people are afraid to eat a bit'a rabbit. Come on people, it's WONDERFUL tasting. Maybe this recipe isn't your cup o tea so to speak... Try a rabbit stew, with some potatos, carrots, onons, some salt & pepper (obviously), MAYBE some celery, a bit of your favorite herbs &/or spices (or ones which'll mix well in this), THEN if you want add some noodles. I'd go with some long flat HOME MADE noodles, they'd work best. Anything else you wanna add... IT'S INCREDIBLE I ASSURE YOU!

  • i know! rabbit tastes soooo good. most people just dont want to eat it cos they think its more of a pet than food. isnt it also funny how rabbit is always one of the first dishes to run out at restaurants, yet nobody cooks it at home?
