Well this is a free game and the engine is probably cheap... So I can understand why it's so easy to land with 1 or even no wing(s) in this game.

um..the how do you land the plane questing is hard to answer but...il answer you other 2 questions...for the wheels g-lower to lower gears shift+g-to bring up gears and how to break is b or shift+b for speed breaks
