I'm a terrible chef, but being Paleo for a year forces one to learn how. All you have to do is add some nice fatty steak or chicken and this is a perfect paleo meal (minus the cheese).

@Sandugo168 i suppose a blender could be used, try 3 cups of water to 1 cup of cauliflower and pulse it so it 'chops' it into fine pieces. strain out the water
Holy Crap was this good. I didn't think that it would, but the tip to add the sesame oil was the trick. I didn't have any veggys, I just had the cauliflower with an egg, curry powder, and soy sauce, and it tasted better than rice. I will add veggys next time.

And the resulting dish--w/ the addition of sesame oil, curry paste and some hot chili/garlic sauce and a chopped shallot (I like spicy food)--tastes a good deal like rice, and has a rice-like texture.
One thing I'd like to point out to fellow cauliflower haters out there is that this fake rice doesn't taste or smell anything like cauliflower. It's like magic.
I don't understand why people aren't shouting this from the rooftops.

Yes. I bought the pure kadoya sesame oil (today, at a Korean market) based on your suggestion. I also picked up the Tuong Ot Toi Viet-Nam hot chili garlic sauce there as well.
I don't know how you feel about hot spicy food, but the garlic chili sauce is fantastic on cauliflower rice. FYI: the stuff claims to have zero calories and less than 1g of sugar.
I still can't get over how good the "rice" is... considering that a huge bowl of it amounts to only a few calories and very little carbs.
use a food possessor or just a knife and chop up the cauliflower really small, almost to the size of actual rice - just a little bigger because the cauliflower will shrink after cooking
