The white rolled icing you are talking about is probably fondant. If you use fondant and it wants to droop or is not stiff enough you can knead small bits of gum tragacanth into it at a time and that will make it stand up better. Gum paste is the other alternative. Hello, thanks I did but at first I was frustrated because the marizpan I had purchased was hard as a rock so it took me a while to finally get it soften. But besides that my flowers came out cute, I also had some cupcakes w/ the # 21 on it since the cupcakes were for my daughters school carnival (PS21) thanks so much for sharing your techniques, greatly appreciate! with practice you can make them faster. This is an old european art. Lots of bakers take the time to do this because the flowers look real.
