  • Pasta alla Carbonara features the following ingredients: pasta, raw egg's yolk (added at the end), smoked baconcubes (but the stripes work anyway), salt, pepper, and nothing, NOTHING more.You put too much unnecessary ingredients to call that dish a carbonara. Remember: less is more! But you seem to be a skillful cook anyway.

Please try to be a bit more constructive asczfreccina88 is. This is an excellent recipe and it is performed very well! (I teach cooking and you can tell itsyourturn knows what hes doing!)

    A suggestion: add some garlic to the mushroom/bacon-mixture while you fry it (at the end) and decorate the final dish with some chive.

  • Yes it is zach style carbonara but for italians like me this recipe can't be called carbonara because there are mushrooms, onions and cream. In Italy there is an only way to do carbonara: eggs, pancetta, pepper, parmesan and pecorino cheese. However if this recipe tastes good, you can cook and eat your zach style pasta.

  • last time i checked there are numerous ways of doing a recipie. Even different reigions in Italy I believe have different ways of doing their pasta sauces.

    So although this may not be the "traditional" way to do it, its still a modified version of the traditional carbonarra.

  • i like it, ive never tryed using any nutmeg before, btw i use thickened cream, and also i dont use eggs as i find it can make the meal very sickly, and i fry the bacon onions and garlic all at once then add cream and leave to rest, also adding salt and pepper to frying ingredients.

  • It is from the word carbone - meaning charcole workers in Italy - my grandmother just made this for me tonight and told me the story that the coal miners used to make this as their lunches while working it was quick easy and nutritious. The Italians were also supplied the eggs and the pork from the Americian soldiers during WW2 - :o) this is where my grandmother and grandfather meet - he was a US Soldier.

This is Zach-Style Carbonara and I like mushrooms and onions in it, makes it more interesting as a meal instead of a starter. To all the carbonara purists I say: live on the edge, take a chance, try the Zach-Styles Carbona; you might like it!

  • Mjah Italians always want the original recipe, maybe because most dishes and products have been turned into weird,untasty, non-original ,cheap, mass consumer products. Like parma, mozarrella, parmezan...

    I agree with the comment that the bacon should be in brown-baked cubes to make it look tasty. I even warm the mixture a bit till it gets a bit thicker (around 60°).

    For the salmonella dude, you can buy pasturizised eggs. But they are not as tasty and extra added chemicals.

  • That was a bit grose... first of all the bacon has to be cooked until crisp and its tossed at the end. The egg mixture consists of eggs, cream, cheese which is added when the pasta is aldente.

  • Chop the smoked bacon block into "lardons" (cubes, not slices)

    Peel and chop onions in big pieces.

    Put lardons, onions and a small amount of black pepper in a pan (no extra fat needed), very smooth fire, lid on : lardons sweat fat with the onions' juice.

    Onions have disappeared : put everything in a strainer, juice away.

    Very smooth fire, put in pan lardons, cold cream and one egg yolk. Stir to get a homogeneous cream. No boiling.

    Option : add a small amount of nutmeg or of tarragon.

    This is a variation (no muchroom, no onions .... and bacon is not exact, you need "pancetta").
