  • Ok, if beef tripe is from cows, and a cow has four stomachs, which of the stomachs are sold to grocery stores as tripe and which of the stomachs is used a rennet to develope cheese?

  • Tripe is much appreciated in many countries. I am an American living in France and tripe à la môde de Caen is judged annually and taken very, very seriously. I had to make it once myself and have it not come out right, then try again, to achieve one of the most sophisticated dishes ever -- eaten cold in aspic, for it's cooked with a split veal foot -- or hot, with a broth so delicate, on its own, even the most finicky will enjoy it!
