    So where can a slightly receeding but definately greying, fat boy in Orlando find the sauce around here? I have a 10 lb brisket sitting in my fridge right now. I'm not sweating now, it's Februrary but you should see me in June :-)

  • Sounds good! How long do you let it rest before slicing it and do you not believe in wrapping the brisket anywhere in the process? Mop sauce? My next brisket will get your treatment! I always seem to do way much more and sometimes it is too much!

  • @gysss1 Oh, that would be sooooo wrong!

    You would not get that great smoky flavor nor would it be as moist.

    But you can sure try to cook it in an oven using this method.

  • We recommend leaving the fat on.

    This renders the fat into the brisket and makes it nice and tender.

    We put it in fat side up but experiement with what you like.

  • Awesome video. Thanks, gotta a couple questions. In the prep process you didn't do any trimming of the fat did you? I see so many videos saying to trim it to about 1/2 inch. Also when you put the brisket on the smoker, did you put it fat up or down?

I have used one of your companies smokers for the past 6 years and just love it.......however your presentations have made the use and prep of meat, cheese, etc so much simpler, and at time confirms what I am doing. Also just loved your suggestion on wood chips. I thought you always had to have chunks of wood. Thanks for your videos, will look for more.
