I have yesterday visited his restaurant in Chaudes Aigues (Cantal, France). He calls his food 'emotion culinaire' and it surely was. It really was wonderful. Great food (delicious carpaccio de langoustine), excellent service, beautiful views, not forgetting the interior design. If you're in the neighbourhood, it definitively is worth a visit. I surely will come back.
