While being all genius, haven't you stopped to wonder that it isn't about the 'kinetic energy' while using an apostrophe, but about the sound it gives? For an example, it's different to say : doin' instead of saying doing. When you say 'doing' it looks like a sound you're trying to put to words. Besides, it looks better. However, I wouldn't use doin' in a formal letter, only on youtube etc.
