The problem lies with the kind of sugar you are using. The best kind of sugar to use for creme brulee is that huge rock sugar that you buy at cake decorating stores or specialty baking stores. The small granules get absorbed into the custard and they also do not have a large enoguh surface area to melt and create that thin layer that you want before they start to burn. Ok? I am a chef in training with lots of experience.
