Like LevisOrdo said, they are controlled techniques. Most of the time when in a fight, you won't use most of these techniques, and same in BJJ, you won't use the really advanced moves all the time. Sometimes the basics are the best.
The moves near the end where they crawl up the opponent and strike them while on top are difficult because they require that the opponent's stance is low, with the knees bent and legs spread. Those moves are rare in muay thai, and you would almost never have an opportunity for that in MMA. Also, vertical elbows to the head are illegal in UFC. However, flying knees, and spinning-back elbows are used by Muay Thai strikers like Anderson Silva and Shogun Rua. These moves just aren't as practical.

Except the Thai variant is more static than the Khmer shifty style of body evasion/movement still if you believe the Thai's they bear no relation to each other!

@charkoly mayb cause most of these moves arnt made for mma. i have used quite a few of these in sparring and they work well. its all about timing.
