  • So why has this gotten thumbs down? I mean i believe in cooking duck in the pan skin side down 100% of the cooking time just basting the top with it's own fat as opposed to adding butter but at least he knows to baste. And yuzu on duck = good news. 

  • Nice job, but when resting the duck breast rest it skin side down to prevent juices from leaking.

  • when you cook duck always start with a warm pan so you want lock in all the grease from the duck.

  • Pan roasted duck with orange sauce. Not a traditional Japanese dish. More like French dish?
