  • i tried preheating my stainless steel pan like you do with a wok untill it is really hot and i noticed the copper base started producing an awful lot of smoke and i turned it over and noticed the base had started to almost peel off due to the intense heat. SO i am assuming saucepans with copper alloy bases should not be preheated like woks can be. Only pans without copper bases can be preheated like cast iron and wok without copper bases.

    Monosodium Glutamate just like normal Sodium Chloride salt is a flavour enhancer. In moderation can enhance the flavour of a dish without harm, but like salt should be used sparingly.

  • After researching MSG, soy souce does contain MSG naturally due to fermentation of the soy. So the solution would be, not to use soy sauce.

  • if this is not a Chinese dish, then it shouldn't be called chicken chow mein, unless chicken chow mein is out of the Asian restos. I did this today, and was kinda disappointed lol. I like Jamie but this one hmnn not so sure. I agree that garlic/ging on the pan first will make a lot of diff on the taste of the chicken. The local resto has the juicy broth and all of it suuper hot, that they don't cook the noodles just pour on it. Try soy sauce without MSG and low sodium. See how you like it...

  • @drmedwuast Hahahaa I take it that you've never done any cookin' yourself....by the time the chicken gets cooked, the ginger garlic would've got mixed with the chicken and that's what gives it the yummy flavor...'N ofcourse it can get burned also ...if you add it in high heat and let it just sit there...add the damn chicken as soon as you smell the ginger and garlic in the air....btw you don't have to use ginger just use garlic, onions and green pepper 'N the taste will be awesome..!!!!

  • @seanmcbride1 combining ginger and garlic increases their antioxidant effect by 50%, but only if you don't burn it. and by burning it, I mean also not cooking it to hard. also personally I just can't stand the taste of garlic that is rosted too much, and I don't care what some people might call authentic chinese, I don't like eating it. most of the time I like to throw in the ginger and garlic at the last few minutes, without any heat under the pan, so taste remains the way I prefer it

  • @drmedwuast ...it's about personal choice and preference I guess...authentic Chinese is a li'll too authentic for me..if you know what I mean...it's not spicy enough...I love the Indo Chinese take on it...In India there's chilly chicken which is supposedly the most famous Chinese dish there...and the Chinese don't even know about it....for me I could spend the rest of my life eating Chinese food and I'd be happy...Chinese and Indian for me anyday anytime of the week....love it...!!!!

  • The critics here are unfair. There's loads of snobs talking about "authentic" cooking. FACT...most cultures in the world has cuisine that evolves. Some vegetables are relatively new, I know a bit about the production process of vegetable growers. This looks fine and is, in my opinion, "authentic " enough. It obviously relates to oriental style cooking. I'm more concerned that he is using a non-stick pan. These pans are not good for using with very high heat. Get a proper wok and season it!

  • @ebramia lol,why wash chicken? once its cooked whatever nasties that were on it have long gone with the cooking process, you dont need to wash any poulty or meat, it disturbs the natural flavour for one and adds unnecessary water to dishes, I have never washed chicken breasts, the only thing I wash is if I buy a whole bird, and only then I wash just the cavity of it to get rid of any blood that has rested there.

  • for people talking about cooking skills blah blah Jaime's recipies from ministry of food are designed for housewives who may lack even basic cooking skills and want a minimum of fuss while preparing a meal.

    He never said this meal was an authentic hong kong noodle or anything, it's an option for a little something called DINNER AT THE END OF THE DAY!

    Jaime has plenty of skills as a chef, he even apprenticed under Gordon Ramsay at one point. He isn't trying to teach people how to be a chef here

  • Well... I've always known water chesnuts are used in chinese and other asian dishes, but I guess it depends on the area you live in, China is a big country. Besides, I've always believed cooking is very flexible and free, and won't really matter if you change the method or some ingredients it will still have it's foreign personality. Real mexican food is only made in mexico, well made italian you will only find in italy and still we all recognize it anywhere. There's no need to fuss. Have fun!

  • LOL this one is a mess, he did a coupl of things wrong.... 1st, the chinken would taste a lot more flavourful if he had marinated it with a bit of salt, soy sauce, sesame oil a few drops of water and corn flour to seal the flavours. then after the wok is heated and oiled, he should have fried the chicken till about 80% cooked, and removed it from the wok, THEN the ginger etc followed by all the vag, noodles and chicken. one more thing, 'authentic' chow mein should always be dry, NO SAUCE PLZ

  • LOL people here need to stop being so arrogant and ignorant. I am a Chinese living in Britian and please learn this: These 'Chinese' cuisines you see aren't Chinese at all. No we don't use water chestnuts, there is no such thing as minced prawn toast, and in Chinese cuisine you ALWAYS ALWAYS fry the ginger garlic etc... first before you fry the chicken. Not saying that the western way is wrong, it's not. It's obviously customised to your tastes, but you really need to learn what's authenthic.

  • ar, I don't think there is anything 'authentic' about Chow Mein. It's about home cook you see and you can use anything you like. Being flexible is really what Chow Mein is about, and quite frankly, Jamie didn't say this is a 'chinese' chow mein =.=

  • @gooner4ever4life i am chinese living in UK too, what you said was about 80% right... one thing i would go against you is, WE DO USE WATER CHESTNUTS, this is one of the most traditional ingredients, but modern "proper" dishes are for some reasons are neglecting this as an ingredient For you interest, i grew up from a farming famaily and my parents are very old fashioned, but i found WATER CHESTNUTS in the dishes all the time, that was before i moved to UK

  • @gooner4ever4life i agree with you...those ingrediants are not used in an actual chow mein, and you always fry the garlic and ginger first..

    another mistake Jamie made, is that he had the noodles sitting in the water way too long! its only meant to be in the water for 30 seconds, then you fry the noodles in with the chicken and everything else, to get the color, and a little bit crispy, but not too much. he also didnt use the chinese rice wine.. i think there is a another sauce as well...
