  • I just made this tart-fine today, and did a balsamic-fig spread on top of the pastry.... then the apples and the rest was Gordon's method... WOW!!!!!!!!!!!!!!!!! It came out AWESOME!

  • @ButtBouncer500 I took the powdered sugar and sprinkled in some pumpkin-spice (which has cinnamon).. it was AWESOME! Mine is cooling off as I just burnt my mouth on the first bite! LOL

    I tried caramelising the tart under the grill - it didn't work (most didn't caramelise while rest burned). You have to buy a blow torch. Buy a normal one from DIY store - chef's blowtorch is FAR too fine a flame (takes ages). I found out the hard way.

    You need: mandolin (or v sharp knife & lots of patience) to slice apples; apple corer; blow torch.

  • Tried this wasn't great, wasn't bad either. Then again I picked up the wrong dough. Still with pie dough wasn't bad. Maybe more sugar next time.

    A broiler is an overhead grill.

    If you want to caramelise the tart, a direct, overhead heat (a blowtorch or broiler) is the best idea.

    The convectional heat in an oven will ruin your tart before it caramelises.

  • you can substitute the blow torch for the broiler in your oven

    just set your oven to the broil/grill setting. only the top broiler will come on and will give the same heat effect as a blowtorch

    just keep an eye on it though!

  • It barely works, but blow torch is waaaaaay much better. Once when I did Cremé Brulee the sugar didn't get caramelised in the center, but burned in the corners.

  • You can get them anywhere, they come in a crème brûlée kit for about 15$.  You don't need a huge one like that.

  • It's not a particularly expensive tool. Of course it rarely comes in handy, but it's an absolute gem when making desserts like this and Crème Brûlée.
