Looks great! Your recipe is pretty much the same as mine, but I blend everything for more of a hot sauce or if I'm making it more for a meal I add ground meat. Best of luck to you at the fair, I know it's some awesome yummy stuff!
It's to late but just dice tomatos and don't boil them not so much onion and add cilontro and garlic!

It is most of the time -- if the onions are too strong it gets a little overwhelming the longer it is stored, but it usually doesn't last too long.
