Your mob trap should be shorter. Like, the water should be 3-4 between each sign, if you understand.. the water would go much faster, and you should make a lava pool so the mobs burn and the stuff falls down in the hole so you can grab it :D

A suggestion for you is to make charcoal. You do it by smelting wood logs, and since you got a whole bunch of them it could be useful. Charcoal is just like coal, looks like it and used just for the things coal does but they don't stack on each other.
