  • Hi, Nope you don't have to do that at all. All that does is to make the sauce more bitter. That is why we add the sugar. The paste is added to give a more in depth color as well as a more full body tomato flavor.

  • dont u have to caramelize the tomato paste before u add it? cuz it goes bitter.

  • After you dice the tomatoes put alot of salt in so that some water comes out of them, makes the cooking much easier.

  • Crushed tomatoes are more versitile. I have always hated tomato sauce. Now I know why. Tomato sauce is cooked with onions and garlic and such. I always make dishes from drained crushed tomatoes. This way I only cook the tomatoes once. I like the taste much better.

  • @AugustusLarch With cooking it's all about preference. This recipe uses a very old method that is still being used in many professional kitchens throughout the world today. But yes crushed tomatoes have their place in every kitchen, professional or not. Thanks for your comment!

  • At first I thought you were makinig some big Italian dish. I'm not a big fan of Italian food. Everything tastes like pizza to me. I always put a little sugar in my tomato sauce also. You really need to or it is just too acidic.

  • @PrincessChronicles yeah that is what is nice about cooking you can make it just the way you like it :) I use a lot of herbs spices to get differed results too, not to mention olive oil and sesame oil are amazing :)

  • @14842 I mainly use olive oil, coconut oil, palm oil and walnut oils the most. I am going to try to incorporate more sesame oil into my cooking.

  • @PrincessChronicles sesame oil is one of my favorite to add a extra rich flavor to most of my oriental dishes. it goes very well with crispy salad, Won ton soup, chicken, diced meet, duck, Noodles and pasta. best part of it all you can use very little like 2 tea spoons will be enough :))

  • @14842 Try frying some croutons in the sesame oil for a little added flavor with salads, or when BBQ-ing. There is lots that this oil can be used for when cooking.

  • nice:) great sauce, I love basics, I personally is always a little scared using sugar in sauces. prefer more the traditional un souring of the tomato paste with the unions first and add a little chicken stock...

  • @14842 The secret is to add bit by bit, if you add a whole heap of sugar you will just destroy the sauce. So bit by bit, also try to avoid adding any kind of stock to the sauce, it just kills the flavor of the tomato. What we add here is to enhance the tomato, salt and pepper as a seasoning will be just fine.
