  • Bamboo steamer? Raw meat? Porous product? Um yeah! People cook fish on parchment paper in bamboo steamers all the time!

  • @pcs56 True... but in practice, the most contaminated part (parchment) can be thrown away. Using parchment helps but not everyone uses it.

  • @gdmz29 duck is beautiful if cook / pan fried or bake right. even as duck soup with noodle or rice. for soup you need salt to teast. so i say go 4 it. you'll love it. Ohhhh! one more way to love duck BBQ! have a gooooood time.

  • "Twas the Night Before Good Eats" is where he mummifies the duck before he cooks it. Somewhere around a half hour into the hour long episode.

  • @briky71 The first time I tried this duck recipe, it came out glorious. When I made it the second time, it came out all salty and greasy. There is definitely something to be said about the duck you use, and just how you marinate it.

  • They special order the duck whole, sometimes feathers and all. They pluck the duck and process it at the restaurant before cooking.

  • Well, I cooked the duck, it was awesome, but what do i do with the giblets. Supposedly they are good eats.

  • Rinse and devein the duck liver. Saute in olive oil on moderate heat. Cook each side for 45-60 seconds, not very long otherwise the liver will begin to melt. Cut into slices, then season with a good seasalt or kosher salt and pepper, and drizzle with a small amount of good balsalmic vinegar. Enjoy. The gizzards and heart are good pan-fried - first soak in buttermilk, then coat in flour and panfry.

  • And the neck?

  • Use the neck (and the back if you quartered the duck per the recipe) for stock, gravy, or maybe even consomme. The neck and back have lots of collagen and thus make good stock or sauce.

    im serious, i was soooo surprised at how good it tastes!!

    i'm a chicken lover, i LOVE chicken.

    But when i tasted duck...wow, it taste similar to chicken BUT A LOT BETTER.

  • Did this recipe last week...good lord. One of the best meals that I've made...and ate, in my life. The duck is tender and juicy, the skin (especially on the breast) is the stuff of dreams. I am now proud to say that I have an ice tray's worth of frozen duck fat and carnal thoughts in my head. Mmmm...

  • One of the best meals I've had in recent years was duck with a nice cherry sauce. I had always shied away from duck, but one bit and I was born again.

  • This recipe is delicious. The skin is the best part. I tend to cook potatoes in the leftover duck fat rather than chard, though.
