Rinse and devein the duck liver. Saute in olive oil on moderate heat. Cook each side for 45-60 seconds, not very long otherwise the liver will begin to melt. Cut into slices, then season with a good seasalt or kosher salt and pepper, and drizzle with a small amount of good balsalmic vinegar. Enjoy. The gizzards and heart are good pan-fried - first soak in buttermilk, then coat in flour and panfry.
Use the neck (and the back if you quartered the duck per the recipe) for stock, gravy, or maybe even consomme. The neck and back have lots of collagen and thus make good stock or sauce.
