can this receipe work without the pancetta? I need tomake this for xmas dinner and they're vegetarians. can i take the pancetta out or can you suggest something for me to replace it with???
@ringsidesexy It was a slightly different version I made, but I have toasted barleys before adding any oily ingredients instead of bacon/pancetta. I've also replaced chicken stock by vegetable stock, or adding salt to replace the broth.

@fl260 lmao you could've add bacon and zucchini instead of eggs, black olives and radish lol or if you wanted too you could've add chicken breast but that needs more things
I made this for my boyfriend and I and he said he could eat this every week! I only had enough left for lunch the next day. So it was very good. I did let it simmer between eating two different bowls and I think it tasted better. I also doubled the amount of tomato paste. I'll be trying more of your recipes!
That looks so delicious and easy to make. I am deffinately going to try it. Thanks for putting it on you tube. I've been wanting to try to make menestrone soup for awhile. I know how to make chicken and split pea soup...I want to go further in making differant soups.
@sunbakedglory hi there, pancetta is and italian bacon, its very similar to regualr bacon the only difference is that pancetta is not smoked. but if you cant find it go ahead and substitute regular bacon. Hope this helps and as alwasy, thank you for watching! laura :)

This recipe looks really good. I think you did a great job with the video. I have one suggestion though, try to mention what the heat of the burner is more often through the cooking process. Other than that everything was great. Keep up the good work
In the written directions, do you list 4 cans of chicken broth in case one likes a thinner soup? I think you only used 2 cans in the video.
