the choke is a simple piece of nylon in which I've inserted a small ball bearing.

nothing special to compute ! Just use a standard test tube big enough in diameter (from 16 to 20 mm is good).
For the stroke follow the indication of my experimental #1 (first comment)

how meny disks is on it 2 or one and you shold remove the innerds of the motor so it can moove faster

In my opinion, YES as long as the glass syringe does not present to much friction, it should work fine ...
