2. Contrary to popular belief, washing your mushrooms is actually good because "brushing the dirt off" is equivalent to eating it right out of the earth and you're not washing off any of the chemicals that your mushrooms were growing in.
3. With Portobello mushrooms, you need to take out the gills. The gills actually hold all the water content.
Would be a good idea to actually season the beef. What a waste of good meat to not season it. Beef just loves pepper, but the proper amount of salt is equally important. We never did get an answer to why one shouldn't season the beef?
Poorly seasoned food is just disgusting.
Why put the pan in the oven prior to cooking the beef? Searing it on the pan on max heat is more than enough. Why would one give times to follow when you should be able to determine the degree of cooking, purely by touch?
@aluzart There are two types of people when it comes to beef, steak, and anything of that like:
No salt because it makes the meat dry.
Salt because it adds season.
I have never encountered a problem with salting a piece of filet mignon. The reason why beef goes dry is because generally people poke and prod the piece of meat during its cooking process.
Also, salting your piece of shitty steak actually makes it better by tenderizing the meat. Just before cooking, wash all that salt off.

Why people usually cooks dry beef is the fact that they over cooks. Even if you want to have your steak "well done" (which by my oppinion is like assulting an unborn child) they most often cross the line between well done and over cooked, there should still be juices from the meat when it's been cooked well done.
You'd better give a call to Ruth's Chris, Morton's, Sullivans, Capitol Grille, and a few other 5-star steakhouses to let them know they shouldn't be salting before cooking.
Holding the knife with the index finger... warming the pan in the oven... no oil in the saute pan... no pre-seasoning........................... GOTCHA!
