It is the server that your email program needs to connect to to receive mail. It actually is more like an address from your mail service (hotmail, gmail, school's mail). Depending on where you get mail from it will usually looks like, mail."name of server".com or pop."name of server".com. You can find both incoming and outgoing address in help files or FAQ of email providers
What else did you want to know. This was basic knowledge to help with common features of Mail. What more do you need explained that the help file could not answer?
