well, you could do all those fancy blocks... but I find that a few parrys to the knife hand makes him let go. also, you are holding the stick to far from the end, that can become a handle and the opponent could take your stick away.
@machdude1 Regarding the way to handle sticks, the end of the stick is unlikely to be the first place to grip for a disarm but this way of holding the stick gives a better control of the stick (useful with heavy sticks), allows you to strike with it and to use it for disarms.
Blocking in this situation is redundant. Just hit him or the knife hand. Dont need to do all that movement. Just stay away and hit him. Less is more:)

Also escrima is very good for improving hand eye co ordination and the grappling techniques can easily be translated to open hands. A martial art is seldom one dimensional based on its teaching aids techniques ect. A smart person adapts there skills to a situation not the other way round.
When in time of danger, you can grab something form your surrounding. like bottles, stones, sticks, or anything that would be of help. Arnis/kali is not just about sitcks, sometimes it teaches you about knife(balisong) fighting, and even punches or how to avoid/ block those knife and punches..... in real life, the rest is common sense, dont let fear engulf you, and luck.

you always have two hands with you, so if you dont have a stick, or anything in your surrounding that can be used as a club or blade, the same movement applies. even your gun when it runs out of bullets become a great arnis club.
the knife attacker isn't even in range, he's off by 40cm, furthermore you're instructing us to coordinate a block, sidestep and lunge faster than someone can jab. A jab is one of the fastest moves someone can throw. I'm a bit iffy on this move.
But all in all you give clear instructions and the video quality is excellent.
Although I agree with you, he was talking about a "thrust" not a jab, so he's be almost lunging at the person correct? not bringing the knife back in close fast, giving time to do this blocking move.
