And he's not saying "Bobbing at the high school hop," he's saying "Bopping", which is a 50's term for dancing, and rocking out. Bobbing is a term for something that bobs up and down, like apples in a barrel of water. Hence the phrase "Bobbing for apples."

He was an intense guy at times. Here, I think he's trying to throw out as much energy as he possibly can-- part of it is probably his pride as a professional musician, his competitiveness. He wants to show every one what he can do, that he has the goods, so to speak. And I think he wants his fans to really enjoy the performance. I'm sure he got a kick out of that, and it's probably his main reason for being a musician, along with the fact that he really loves this music !
