Very simple - cows/pigs/chickens are farmed. Snakes in China are caught in the wild. If anyone has been to the snake wholesale market in Guangzhou, even people who don't like snakes would have to admit its very sad to see. In much of China, they have harvested so many from the wild that they now import from Indonesia and Vietnam as the numbers of larger species have mostly gone. King Cobras is a good example.

My mouth waters just looking at this and I'm an proud American. This brings back memories of tasting water snake in Zhong Shan. and Hong Kong. Had it battered fried which tasted like lean chicken. Had it in rice porridge which tasted like chicken. The skin is the best part, it is like jerky but with out the protein fibers that beef. When I visit back China again, I'll make sure to eat water snake, frogs, and freshwater worms cake or whatever you call it.

For example, chicken and calf are mass produced and live in terrible conditions just because humans feel the need to eat them.
