Lovely recipe! I love it. The substance that makes it bitter is either Phylic acid or it is the substance called "lectin."
Lectins in grains should be soaked or sprouted. It is not that healthy to ingest Lectins. I now soak my quinoa for 24 hours in my refrigerator and it is easy to cook and it tastes sweet.
