    I tried chicken in place of the shrimp in the third pouch, but it didn't quite work. The ramen was hard and crunchy. Maybe I didn't have enough liquid?

  • I did the salmon pouch last night. I couldn't find any fennel in my store so I left it out. It also took about 6 minutes in the nuker for me. But oh man, that was the best salmon I have ever had. Everyone should try this dish.

  • I have done this- the tricky part is getting enough liquid to the Ramen. Same if you use potatoes. Those starches are hard to satiate!

  • Wait, he's using Mirin with the foil? I thought he said that acidic liquids react with the aluminum... perhaps it's too diluted to matter?

  • actually the foil will give off a ion or two but nothing like if you would put a diffrent metal next to it. That creates a battery ie free movement of ions because of the acid between the two metals. So acid and aluminum is okay as long as you do not add another metal to the mixture.
