Since I was young, I had poor mortar control. I couldn't write or draw well, I couldn't cut my food without help, I couldn't even pick up objects like coins or pins. My ring fingers could hardly move at all without pain. I didn't learn to tie my shoes until grade 8, even though people had tried to teach me before I developed a habit of fiddling my fingers, twirling my pencil, and drawing. Soon, I gained better control of my hands. I still need practise, but I'm getting better.
It is interesting. However, it is very important to note that "thinking" does not equal practice.
Physical motion involves more than just the motor cortex. It involves many parts of the brain that respond to an actual physical movement. Let's not also forget that certain motions can become reflexes, which are part of the simple brain.
While thought affects it, it does not mean that the brain gets the same experience as a full practice over many years. They should scan the rest of the brain.

You dont actually have to go the Gym and workout. You can just think the workout, and the body will build new bigger muscles

Muscles and the brain are completely different things.

According to the documentary, you'd have to make your muscles think, not your brain. Maybe you should rewatch it.
