@mareksison Unfortunately, Manila Mangoes are from Mexico. I googled it, thinking it was Philippine mangoes, but it isn't. I was disappointed. :| There's a dispute about it too, some Filipinos claiming the Mexicans used "Manila" misleadingly.
@hamificationable but they look exactly like the magoes we have her :( the way it gets peeled exactly like it too. And we are a more moist region. Mangoes grown here should be more moist and smooth than the ones in Mexico. It's kinda weird
@mareksison Yeah, it seems to be a variety of the local Carabao mangoes. Mexico was a Spanish colony too, so it's likely a result of some trade centuries ago. But either way, Philippine Carabao mangoes are still the best mangoes in the world. I think it'll work here.
great sauce, but isn't it a little too overwhelming for fish? i'd think that the subtle taste would be totally lost because of the strong chilli. the rest of the ingredients sound amazing though

@Aceinthehole7269 you need some sort or outer layer to protect the ice cream from melting. alot of japanese restaurants use what they call a tempura batter, but its essentially a funnel cake or pancake batter. scoop up ice cream, drop it in the batter, take it out, drop it in the fryer and then just firm up the batter and your done in about 1-2mins tops!

in the state and canada (not sure about other places), sambal is mass produced and stored into containers (called sambal olek2). So, it's no the fresh sambal that malaysians and singaporeans are used. And the sambal here has a more sour taste to it and less heat compared to sambal belacan or the likes. And it's more watery. Unlike sambal belacan that stands alone, sambal olek2 is usually mixed in something (like into sauces/soup/dipping etc).. :D

Maybe he's refering to a different kind, but the one I know is Malay, and the sambal he used (with the obvious chili flakes in it) looks Thai to me.
