I think vole would have been a better choice for V. For X mammals, he could have gone with Xantis, Xanclomys, Xenarthra, or Xenurine. For Q, he could have said the Quagga (extinct zebra subspecies with stripes only on the front half).  For U, he could say the Uakari (fruit eating primate native to the Amazon rainforests).

And yes I had to google all those except for the vole.

Those aren't mammals; they're birds. He could have said Quechuan Hocicudo (which is found in Bolivia) and Xanthippe's Shrew (which is found in Kenya and Tanzania).
