It's just boiled flour and egg in chicken stock.. I actually used soda crackers instead of matzo meal.. just have to crush it really fine.. i am genius. Also, adding garlic salt when boiling the balls adds tons of flavour

Unfortunately, Mrs. Igdaloff has passed on since the video was made, so I cannot get a direct answer. It is my sense that freezing was a matter of convenience. However, many old recipes work for the strangest reasons. Many people make recipes as written and do not get the same results as the author. You can experiment and decide for yourself whether to freeze them.
I am Mrs. Igdaloff's daughter and I can confirm that you do not have to freeze the matzo balls before you use them. She did that because she made them ahead of time and also sometimes she had more than she needed. Hope your matzo balls come out like hers...they were divine!!!!

Freezing condenses the matzo balls and make them denser. Sometimes I chill them sometimes I dont.
