@Razor5harpe : Bramble is ok, I don't know if they'll eat oak. And they like carrots, apples, lettuce, berries... And you can try babyfoods with fruits.
@Tapiiiri Mine are living happily on a diet of Ivy leaves (not poison Ivy!, the stuff you find growing on the sides of houses). Which is nice as it's ever green and available all year round and it's free and I have a whole wall off the stuff in my back yard.

RIP Pelle and Matias, wish I could have few more stick-insects this summer, but I haven't found yet anyone who would sell me some.

I seem to recal from talking to someone about these and he said they latch on to whatever ( like your hand) and grip it very tightly and it sticks you, is that true and does it hurt more than a praying mantis pinch?
Yeah they grab your hand with their "claws", but it really doesn't hurt. Males have longer sticks on their back legs which may feel uncomfortable or even hurt, if it grabs you very hard. These two were females, so they didn't do any harm when I handled them.
My mantis' never pinched me, they were calm but the front legs are sharp and you can feel them. I'm sure that when mantis gets angry and hits with it's claws it hurts more than stick-insects back legs.
Usually when stick-insects get scared they drop themselves. So when you handle them you must keep your hands near the floor, or the bed or the box where you keep them. Couple of times these females dropped themselves but they landed on their "box" or what you want to call it. So no harm done.

They only grabbed my hand and because they're stick-insects, it might feel a little uncomfortable.
They don't sting and these were females, so the "sting" is just for laying eggs :)
