    You can also warm up oil and add to your pastes if you don't like vinegar but most ready pastes has oil, salt and vinegar to preserve them well.

  • I am learning a lot from you Bhavana . You are loved by all and really good housewife and I can imagine how you manage all activities including replying to each comment . I would suggest not to add too much salt as you have old people staying with you . With less salt it stays good as I tried it . It becomes little harder but not that hard, it comes out easily from container . And we can store for just two weeks is good as these things are not very expensive to store for six months .

    It is not darjiiling tea. It is used to get little more extra flavor in tea. It is known as lili chai means green fresh tea leaves.

    If Ginger roots are young and skin is not really thick and hard, I just don't feel like peeling. Skins also has more taste.

    My sister gave me the box but you can buy container that has 3 to 4 compartments like mine and it will work great for you...the one that my sis gave me with 4 compartments in it is great for me since you can take out individual compartment if you need to wash.

    You can store up to 6 months all these pastes and yes, you can also freeze cooked onion paste.

  • Hi, I chop mine fresh everyday (garlic, ginger and green chilies, also that much salt can be harmful especially for folks with high blood pressure, just an opinion.

    I have already told several times and one more time, I do add salt to all paste and all pastes made same way. If you visit website, you will get more idea. My big containers of all pastes stay in freezer and I take out small amount for everyday use and keep in fridge...enjoy!

    I keep my 3G box in fridge. Other big container, I freeze them. And b/c I add enough salt, it doesn't really get freeze. When I want to take out into my 3g box from freezer's container, I keep those container out for about half and hour and easy to take out pastes. Hope this helps. any question feel free to ask.

    Hi

    You can use any type of salt you using. If you don't want to add much salt, you can also add vinegar to preserve your pastes. And when you cook, you have to actually taste your food and then if require more salt, you can add. But believe me once you get used to it, you won't even need to taste before adding salt. Over the period of time, you become good at eyeballing. Enjoy!

  • dear bhavna, made ginger paste , turned out great as i put quantity amount of salt as u advised. but for garlic paste do u also add pinch of turmeric powder, coz it has a lovely orange tint when seen in video. also when u make for 6 months or so what quantity u take. i als wanted to make in huge quantity. hope u will be kind enough 2 give a reply 4 this

    It depend on the size of family really and use of all pastes. I make about 6 lb of each. I don't add turmeric but it changes color after couple of days in the fridge. The color stays as it is till you keep garlic paste in freezer but as soon as you take out in fridge for daily use, it changes a color. If you don't want that to be happened, add vinegar to retain the color of pastes original. Hope this helps. And also exactly the same way, make garlic paste.

    Salt keeps paste soft and not freeze them and you don't have to add salt when you cook. Add salt if needed only.

    The garlic paste has turned Greenish, is it safe to use it? as i see in all your videos the garlic paste is more yellowish,i am confused.

    Its only 3 days since i grinded it.

    Did you add enough salt? If so, I wouldn't worry about color if it was in freezer. Make sure it doesn't smell different and not sticky. If you want to retain the color of the all masala paste as it is, add vinegar and your paste will stays longer with it's original color. I recently started doing that so will make sure that I post on this video. Thanx

    Actually it's nice to share what I did with my children. I used to boil carrot, peas, green beans, light indian daals such as mung daal skinless and used to pureed fresh. Rice I make every single day so I used to add water and make puree and just feed about 2 tbsp in the begining. Slowly increase quantity. Homemade fruit purees are great as well. Just try with few only in the begining and see how it works.

    Just freeze the whole ginger and whenever you need for tea use right from freezer. I have seen many of my family friends do this specially ginger for tea. Give it a try.

    When garlic paste is fresh, it looks off white but then it turns color into yellowish in just couple of hours even if you keep in referigerator. So if you want to your garlic paste white, then keep it in freezer with enough salt in it and salt will keep garlic as it is not letting it freez. Thanx

Any suggestions or tips for refrigeration rather than freezing? Also sometimes it gets difficult and boring to remove the skin of garlic when making paste in large quantites.     Hi Buy garlic peeler avialbale at some Kitchen gadgets collections stores. If you don't want to let your garlic turned into green, there is only one option, you have to keep in freezer.

    Hi you can keep all pastes into freezer if you wish. It won't change color if you freeze them. And if you have enough salt then it won't get much harder either. I usually do that but I use pastes a lot so it doesn't stay till 2-3 weeks in my referigerator..so give it a try

If you buy it already made at the store, no telling how long it's been on the shelf and look at all the chemicals and preservatives.     All paste does stay even longer than 3 weeks but I usually prefer not to keep them longer than 3 weeks. Since you have problem getting them in winter time, than freezing is the best option. If you want to keep in referigerator for long time, store them on very top rack where it's usually more cold. In my fridge, whatever I keep on top rack gets little freezed. So hope it's same for all fridge.

  • thank you! great idea abt the salt. i hate it when i take things off the freezer and have to wait forever to actually break in the paste. also i love that u r recycling the yogurt containers. very sensible and environmental-friendly. even i dnt throw away good re-usable containers. i like indian food tho i have not cooked many dishes. one of my frnd is indian and i like her food. thanks for this channel. i hope to learn to cook indian food.

    Usually, fresh cilantro has short life. What I used to do is I used to grow at home when i didn't have access to closer grocers. Recently, I am wrapping them into towel paper and keep in the beg which has some holes in it.

  • i bought a bunch of coriander last saturday, and wrapped it in damp tea towel and put it in the fridge. 7 days later it's still perfect to use! :-)

    normally if i leave it on the counter it only lasts 3 days.

    Thank you for sharing. That's great way to store cilantro. I do the same thing but only thing is I use dry towel instead of damp and it stil stays good in fridge for more than 7 days sometimes, depend how fresh are they when I buy.

    i just make a fresh paste of everything mixed together: ginger, garlic, and green chilli whenever i cook a dish. i never bother with freezing it. but yes it would save time to freeze a large amount.

    No, it doesn't make food more salty b/c when i cook i only add just pinch to show in the recipe video but sometimes for some dish we don't need to add salt if you using all 3 paste.

    Also it's good to make fresh pastes as you do.

    Storing coriander

    I usually roast coriander seeds and then make powder. In the powder I add cloves to keep it good for longer period of time.

    Yes, it does still ginger. And in garlic paste, i do use the handful amount of salt just like in ginger. Salt prevents getting all pastes iced freezing. So whenever you take out from freezer, they are not hard but still soft.
