Overall good strategy with the Eastern Romans.

I have to ask about the Hunnic commander, what was he thinking? Horse archers are good but not charging into heavy calvary. It would have been better for them to harass the calvary and perhaps strike at the Roman infantry when both sides of infantry were engaged then harass when the enemy turns.

The line is fine and is more or less a matter of terminology over time periods, but generally speaking it's called the Byzantine empire after the fall of the west. That said the capitol of the east was still Byzantium (also known as Constantinople, also known as Istanbul)

The army, as in all units, dont hold formations as you want? Is that what you mean?

If I have a pre setup army I want to move as one. Lets say to the left flank or something like that I just select all, ctrl+a, group all, then and right click and move the mouse. Then when they start moving I press the run button.

When moving your troops hold your right button on your mouse and arrows come up where your troops will go.And also when your men are moving hold the space bar to see where they are going.
