The reason why most ultra cuts work is because they exploit the positioning of the track's checkpoints.

There is a cut on Wario's Gold Mine that Mr.Bean35000vr discovered (originally with hacks, but later on without them) that is probably the closest cut of this kind that still counts the lap. It requires the player to bounce off one of the pipes under the final bridge and clip through the track, then drive to the tunnel entrance, turn around and then head back to the starting line. If the player does not backtrack far enough, the lap won't count. The issue with Maple Treeway is that the checkpoint in question is too far back to be accessible from where the ultra "shortcut" leads. My assumption is that the checkpoint in in the cannon.
