  • Instead of another tsp of cinnamon add a tsp of cardamom powder and 1/2 tsp of ginger powder..also add crushed pineapples to emphasize the carrot's taste ..

    If you will be serving it within a couple of hours, you can leave it outside. If you are serving it after several hours or the next day, keep it in the refrigerator and take it out about 1 hour before serving.  It tastes best at room temperature. Happy birthday to your hubby! :)

    Most grocery stores carry flax seed. You can get the powdered form from Sprouts, Whole Foods, etc.

  • Im making this cake for my dad birthday thanks ladies! I f I bake in one pan as I will be making a big cake what temp should I put the oven on at I'm assuming a lower temp for longer, would you line it with backing parchment

    It should be the same temp as the cake will not be any thicker, just longer.

    I made twice carrot cake recipe as per your ingredients ,pour whole batter in one pan and it took 60min to bake.

    Can you say how much time taken if I bake whole batter in one pan?

    and still my cake dint bake properly, from inside it looks sticky and not soft in eating it taste sticky and uncook after baking 60min and all brown?

    what was my mistake ?

    When using a larger pan instead of 2 small cake pans, the depth of the batter should still be the same. If you use a deeper pan, the cake will not cook at the same temperature and time.

  • Great recipe!!! Just finished having my second piece. I made the mistake of leaving it in the oven for a few extra minutes and it came out a little dry. Next time I'll cook it for 27-28 minutes and Im sure it will be perfect!!! Can't wait to try the other recipes!!!

  • The cake turned out really great. I just veganized it by subbing yogurt with soy yogurt (+ the frosting was a little tricky, but turned out well in the end). Anyway, the cake itself was fluffy yet moist and had a great flavor. Best carrot cake until now, so thanks for sharing!

  • Thanks for the recipe. The sponge part turned out great, but I had some problems with the icing. I think it might be that the cream cheese I used was too watery and I had to use almost a whole packet of corn starch to thicken it as it was very runny. The cream cheese I had was reduced fat, could that be why? I live in the UK and I thought maybe there's a difference between the consistency of cream cheese over here and in the US.

  • @jawad384 : the sourness of the yogurt is necessary in this cake. Unfortunately, milk will not work as a replacement.

  • @jawad384 You can replace yogurt with sour cream, if you do not have sour cream, use 1 cup of milk (room temp.) mixed with 1 tablespoon of fresh lemon juice.

  • Can you substitute baking soda & powder, for self-raisining flour, if so how much?

    It seems I always get a weird taste/smell when I use baking sode/powder in my cakes, that’s why I try to avoid it.

  • @mcb0613 Accually yes you can, my mom made it that way ever since i was a kid. Plus self rising flour has both baking soda and powder in it so i was told. There's a lady here on youtube named Betty and she used self rising flour incake recipe, go check her out type Bettyskitchen Carrot cake.

  • What other icing really goes good with the carrot cake other than cheese cream? what about whipped cream?

    Whipped cream will work but the cake is mild in sweetness so a little extra sweetness in the frosting would be good.

  • I made this for Mother's Day! Only I wanted to try to make my first vegan cake with this recipe. I used vanilla soy yogurt (so I skipped vanilla in the recipe), and used the flax egg substitute suggested here.  For the cream cheese I used tofutti cream cheese and it wasn't as good as real but it was fine. It did need more sugar, maybe the tofutti cream cheese was more moist. All in all I am THRILLED that I tried to make a vegan cake, it can be done and it was delicious! Thanks!

  • @darkroge : It helps the baking soda react and creates moisture. You really can't taste the yogurt. But if you are looking for a substitute, try some apple sauce with a squeeze of lime, it should work (personally have never used that method).

  • @locamente10: a lot of health food stores carry it and so do some of the regular grocery stores. You can also buy regular flax seed and grid it in a spice grinder. :)

  • I've heard you can use apple sauce instead of eggs too, like 2 tablespoons per egg and it will taste the same :)

  • @oscarrs13 : you could but you'd have to use more baking soda. Apple sauce is a good substitute for oil/butter as it provides moisture but not the lift that a cake needs.

    We have never tried it with apple sauce but if you do, pl. do let us know your feedback - will be curious :)

  • I love the idea sliding extra wax paper under the cake while icing! Brilliant! I've always had problems keeping my platter clean when I get excited about frosting.
