@naguerea It only comes out right for me when I let it cool overnight. It really takes me two days. It is meant to be set in a cocotte in front of a slowly cooling fireplace. Dutch ovens or cocottes have the grooves in the top so modern cooks can add ice cubes a few at a time, to keep the top cool and the bottom hot. A labor of love. If rushed, it tastes really indifferent.
Cook for 10 or 12 hours?
That is a long time.
