this is one of my favorite dishes. it all started with craft mac n' cheese when i was a kid :) but now i pretty much make it closely to how you make yours. i don't really have any suggestions...maybe an enchilada recipe? i'm from texas so we might have conflicting views on what a good mexican dish is though ;) haha

@yeahyeah1821 ive never made enchiladas before. Here in quebec we dont have many mexican restaurants so our idea of it is old el paso taco kits LOL but I do have a chili recipe I could share :P
