What ever happened to artistic license? It was a comedy and it's pretty clear that they weren't using the word "retard" as a shot at people with mental/physical disabilities. Stiller was lampooning the phenomenon of big Hollywood actors portraying disabled characters a la Dustin Hoffman, Sean Penn and Tom Hanks.

The point of this movie was to make fun of actors. Anybody else who sees it otherwise are the ones causing controversy in the first place. I think a lot of people are missing the point. They weren't making fun of Vietnam or how serious it was for Veterans. The movie within the movie was SUPPOSE to be serious. However the actors within the movie within the movie were complete idiots. They took them out to the woods to teach them a thing or two. That's when they, in their stupidity, get caught up in 'real' issues. But they're too stupid to know it. They weren't playing light on Nam. They were more making fun of themselves as actors.
