anti-joke chicken : Link is mute by tradition. He was born in a time where video-game heroes didn't need to speak apart from the occasional yes/no. Technology has evolved, and Link got a voice to shout with, but for the sake of tradition, he still won't "speak". Pretty much the same applies to the other characters, tradition and also ease of translation. Grunts are international, you only need to replace the text.

I get it know! Link could be deaf and speaks through sign-language! Thats whay you never hear him speak.

Also, deaf people can read lips, so the on screen text could be what Link is understanding when others speak to him. As for moments when people are yelling at him, it could be hyper-sensitvity to air flow and the he can feel the sound waves through his ears.
