I remember reading that Iskender-Efendi's method came as a solution to problems caused by smog and grease fires in Istambul, caused by cooking lamb in the traditional parallel method. It tells how large the city was already in those times.

A fascinating bit of food history, really.

firstly in my opinion only two places make iskender awesome. First is the original inventor of iskender's restaurants on eof which is located in Bursa and I think there is one in Istanbul. The second place is good too which is called Hacibaba. They make good baklavas too.
