Aha, looks like a roux base turned into a kind of béchamel sauce. Very nice - I use a similar sauce when I make lasagna, and of course a similar layering and cooking method too (covered with foil, removed to then crisp up). One thing I do with the lasagna that you could do with these potatoes: when you remove the foil before the final cooking, sprinkle a little panko (Japanese-style breadcrumbs) over the cheese. Extra tasty! ;)

I never made these on the grill, but have to now.
This is a food that everyone likes. Sprinkle some breadcrumbs on the top of that really adds a nice kick too.
I'll try a batch next time I have a pile of coals still hot after I'm done grilling.
