  • Do you cook RAW chicken in the water? Or the chicken has to be cooked somehow already then boil it for 1.5 hrs? (btw u said a teaspoon water, u mean 6 cups?) haha

    Mandi (Arabic: المندي‎) is the traditional dish in Yemen native to Hadhramaut Province Yemen & many other Yemeni Cities known as Haneeth also. It is now very popular in the rest of the Arabian Peninsula and in many other Arab countries such as Egypt and Syria. Mandi is usually made from meat (lamb or chicken), basmati rice, & a mixture of spices.

  • @SoSoniLove there is really no such thing as Lebanese biryani, biryani is an Indian dish and Lebanese food is very different than Indian food. Lebanese food is the same as Greek and Turkish food.

I have a BBQ coming up and I'm wondering if there are any special directions for doubling or tripling the recipe? Also, on your site Cardamom is listed but in the video it is not, so I'm wondering if I should use it at all? (Someone suggested rubbing it on the chicken?) Thanks so much!   • @mkennedy3434 if you want to make more then all you have to do is double or triple the recipe. Yes i think i forgot to mention when I add the cardamom in the recipe but it is added to the rice along with the rest of the spices :)

  • This is nothing like the kabsa we make but it looks really delicious. We also use chicken, lamb or fish steaks to make kabsa

  • @dedemed sorry but extra virgin olive oil is not for cooking, it is suppose to be used only for salad!

  • @etiosoul ACtually it is great for cooking but you should not use it at high temperatures b/c it will burn. It is wonderful for sauteing vegetables, it add wonderful flavor. So yes you CAN use extra virgin olive oil for cooking, HAPPY COOKING!

  • You are welcome, you can definitely make it with beef chunks and you can cook them ahead of time and add them on top just like you add the chicken :)

  • I think mendi is Pakistani or Indian, I think they add curry spice, I'm not quite sure. Give this dish a try, I'm sure you'll live it just as much :)

  • Hi, Dede! I was wondering if you have to remove the whole cloves from the rice after it is done cooking? Is it mellowed enough after the cooking process that it would not be a suprise to bite into it? Love cloves, just curious! Thanks!

  • Yes you can keep the cloves, they blend into the rice and you can't really taste anything to bold. Just follow the recipe on my site and you'll be fine :)

  • Yes, this is rice with nuts and chicken on top. In the Middle East and Mediterranean countries it is traditional to eat rice with toasted nuts on top :)

  • But this recipe is not Saudi, It is the Lebanies way to cook rice.

  • hi dede! thanx for ur recipies.. i have 2 questions: 1. why dont u use cumin in seasoning the rice?

    2.wouldnt it be better if u can add more flavour to the chicken after its cooked just by adding some seasoning and browning the rice or would that just mess up the dish? hope u reply thanx :)

  • 1-if you want to add cumin you can, I don't like it with my kabsa, it takes away from the other flavors.

    2-I do add seasoning to the chicken, that is the purpose of the cinnamon and onion.

    Just try my dish with my recipe and I'm sure you'll love the flavors :)
